Ingredients

  • 4.5 cl gin
  • 2 cl lemon juice
  • 2 cl simple syrup
  • 5 pieces raspberries
  • 1 piece egg white
  • 1 piece raspberry

  • 1 shaker
  • 1 strainer
  • 1 coupe glass

Instructions

  1. Chill your coupe glass by filling it with ice or placing it in the freezer.

  2. Add gin, lemon juice, simple syrup, fresh raspberries, and egg white to your shaker.

  3. Perform a 'dry shake': Seal the shaker without ice and shake vigorously for about 15-20 seconds. This emulsifies the egg white, creating a rich foam.

  4. Add ice cubes to the shaker, filling it about three-quarters full.

  5. Perform a 'wet shake': Seal the shaker again and shake hard for another 15-20 seconds until the outside of the shaker is well-chilled.

  6. Double strain the mixture into the chilled coupe glass. Use both a Hawthorne strainer and a fine-mesh strainer to catch raspberry seeds and ice shards for a smooth texture.

  7. Garnish with a fresh raspberry.
